Legal Question in Criminal Law in California

I am a hair stylist that was renting a station at a salon, when I first started there everyone was using or borrowing everyones things ie. color, developer, combs, stations, blow dryers, scissors ect. I continued to use peoples color when I ran out of my own, (noted my things were also being used) the owner had everyone sign a paper saying we wouldn't. I signed. However when I was alone or didn't have a color i stupidly contuined. The owner installed a camera and caught me and fired me. The police came to my home and issued me a citaion for theft of $87. I have not received anything from the courts. Today I got a letter from the owner telling me to pay her over $4000 for the cost of her camera ($3000) and another $1200 (that's what she claimed I made from profiting from her color) she also said that she is the only one claiming victim, no one else in the salon is, also she is claiming i stole from everyone (but 2 girls had their cabinets locked) she asked that I pay this by Dec. 23 or she'll be forced to take action. What should I do?
