How does a good father get 80% custody of his 2 year old son from an ex wife who is a convicted felon, breaking probation, harasses him at work, knew a past boyfriend hit his son and lied about it, causing emotional distress to the kids and father?

Unfortunately, with those complications, the real answer is hire a lawyer. You can try to do it yourself, but with that kind of situation you probably would be biting off more than you can chew.

Have you turned her in to her probation officer for the probation violations? If so, and nothing's been done, you should escallate that up the chain of command. After that kidnapping case that's been in the news so much, parole offices are highly concerned about being accused of not following up on parole violations.
