can I protect a confidential conversation that I had with someone who is trying to use it in court

If someone tapes your conversation without your consent, then it is inadmissible. If they are testifying as to what you said, however, it may or not may be admissible as an admission or some other exception to the hearsay rule. It is not clear at all what you are trying to exclude or "protect."

There are very few confidential conversations, husband-wife, attorney-client etc. if it is not privileged, unless as mr Roach states it was recorded, it may be admissible.... You heed to discuss this with your attorney. If you don't have one, you need one.
