Legal Question in Employment Law in California

Good Morning

I am a small co. I occasionally hire a helper but no set hours and he controls his hours.(independent contractor status) I paid cash with no payroll it was often temp. work. He filed at labor board for unpaid lunches however rarely worked a full day & when he did he controlled his lunch breaks. Also claiming I owed him $300 for work I questioned those hours. He is filling out of retaliation, I feel because I am not calling back to work (he has been dishonest and untrustworthy. How to I defend myself against his false accusations? Also, I never seen his green card. what are my rights? I am in good standing for over 20 years in business.
