I am ghostwriting a book. In doing my research, I found out the name of a famous restaurant that's located in the city I am writing about. Do I need permission to mention that particular restaurant's name?

Unless you are disparaging the restaurant in some way, you should be OK. Your publisher will make you change the name if it isn't.
