my husband and i own a home together. his mother wants to put his name on her house. does his name on the deed to her house put our house at risk if someone wins a judgement against her over what she has for insurance coverage, etc?

No, unless said judgment is related to something to do with a deficiency in the house. For example, the chimney falls on a passerby because the owners (including your husband) failed to keep it in good repair. In that sort of case he might have liability, but if Mom ran into a busful of nuns while she was loaded, the face that he co-owned a house would not come into play.
