when an employee is told they will be paid a certain percentage of what the employer is getting paid, do they have the right to know the exact amount of what the employer is getting paid & receive copies of it?

It is never wise to be "told" what you will be paid. A written agreement should be in place explicitly detailing what information will be provided to you and the percentage of pay you will be entitled to. Without such an agreement, you are fighting an uphill battle and you may not easily or automatically be entitled to the information you seek.
