If I sign a non-compete, does the company I work for own the work I do on the side?

I live in the state of Florida.

It depends, is the best answer that can be provided to you from the answer provide. A non-compete is a written contract between an employer and employee. It depends on the terms of the agreement. If the side work that you are performing has nothing to do with the line of business of your employer, then most likely the non-compete does not apply. But without reviewing the terms, all work performed for the employer or inspired or motivated by your employment could be deemed to be controlled by the contract.
