What type of document do we need to make sure a minor child will go to a certain person if anything should happen to the parents.

Children are not property to hand off to someone else with a document. The parents need to see an estate planning lawyer to handle this and other matters, including money for caring for the child. They can express their wishes, to be considered. Whether that is in the child's best interest also will be considered.
