Legal Question in Credit and Debt Law in Minnesota

My girlfriend is being sued over unpaid medical bill(s) totaling roughly $1,700. I'm currently helping her prepare her answer to the complaint. The 3rd paragraph states "The defendant currently owes the plaintiff $1692.72 for the valuable goods and services provided by the plaintiff." She doesn't deny the amount was owed, but had assumed until recently it had been covered by her mother's insurance as she was only 18-19 at the time. What response would you recommend?
