Legal Question in Credit and Debt Law in New Jersey

I owed a debt to an ex-partner. Due to financial hardship she agreed to a settlement agreement forgiving the debt five years ago. She's recently contacted me and is threatening to file for an unpaid debt. She included an altered copy of that old settlement agreement. She appears to have removed the first page of the multi-page document and wrote a new first page making it a harsher debt agreement than the original debt, then stapled it back together. Only the last page is notarized. It all looks official at a casual glance. I have a settlement that says she forgave the debt. She has a settlement that says I owe her a bigger debt. How does either side "prove" their document is valid?

She will have to prove that is the correct document, and you will have to prove she is lying.
