Is an email legal & binding as an addendum or change to a signed contract?

Yes, it can be so long as the intentions of the parties are clear. There is more wiggle room with emails than say with a traditional physically signed contract, but it can certainly be considered a written modification to a written agreement. As a general rule, I like to keep the same format wherever possible.
