Legal Question in Construction Law in New York

I am building a house and I am hiring Amish builders who do not carry insurance. I need a form for them to sign in order too protect myself from a law suit in the case of an accident. From what I understand this is the typical manner in witch it is handled

You should insure yourself as owner and deduct the cost of insurance for them from what you pay them. Otherwise, they will still be uninsured and you are potentially still open to litigation if they wanted to challenge the validity of the "form" you seek. I'm sure people use this form often, but you don't know what happens when a person is actually injured. The Amish are good people and workers and they should be protected so you're protected.
