If we have a will, could the will be change without the other person (sufficient other) knowledge? Thank you!

Yes. There is no requirement to notify beneficiaries.

As long as the maker is competent and has not been unduly influenced by someone, a Will can always be changed. If a spouse is going to be disinherited, be mindful that most states have laws that provide some protection for a spouse, so complete elimination of a spouse in a Will might not assure total disinheritance.
