1. customer signed a contract, gives me a deposit check $ 4800.00 and asks me to rush the material for the job and I do so. He has put a STOP PAYMENT on the CHECK. He now wants to cancel the job and I could not cancel the material order. The material costs over $3000 and he is refusing to paY for it which I have already paid my vendor?

You can sue him in Small Claims, if he's local. Otherwise you'll need to hire a lawyer to bring suit on your behalf.
Can you take any of that material back for a restocking charge? If so, you may be able to mitigate some of your damages.
