If an individual defaults on a major credit card and the credit card company sues what are the likely outcomes? (Using an example of $8000 debt)

They will sue you. You have to answer, and in your answer assert whatever defense you may have (i.e. the debt is not legitimate, their calculations are off, etc.). It doesn't sound like you are contesting whether the debt is real. In that case, they'll probably win a summary judgment against you. If you don't even bother to answer, they'll get a default judgment. To enforce the judgment, they will take whatever they can to get the money. If you have a job, they'll garnish your wages. If you have equity in your home they'll attach their lien to that. Even if you have nothing, they'll get a judgment lien against you, which they can attach to property you acquire later. If you have several such credit card debts that may soon be coming as law suits, you may want to consider bankruptcy.
