What happens if you are on probation under youthful offender status and you flee until you turn 25. Once your 25 the court can't do anything about it right?

No, that is not true at all. You will have a warrant for your arrest for violation of probation, and when you are finally arrested on it you will be brought back to court for a probation revocation hearing. It doesn't matter how old you are when you are caught. At that time, the judge can impose whatever sentence was suspended at part of your probation. If you are facing a probation violation, you need to meet with a lawyer and develop a better strategy for staying out of prison.
