Can a father have a DNA test done without the mother present? If so what type of documentations are used for the father to use if he's not on the child's birth certificate.

A father can have a DNA test done without the mother. What is important is presence or testing of the child. There is a larger question of paternity here. If you belive you might be the father of the child, but were not married to the mother or did not establish paternity by some other method you will have to go to court to establish paternity of the child.
