With holding pay
Can your ex-employer with-hold your last pay if they have a criminal case against you that has to be sent before the grand jury, until the courts rule if you are innocent or guilty, if it incolves several employees and missing money?

Basically Yes. This is the only exception to the minimum wage law. The basic theory is that if someone takes money from their employer they've already been paid.
If you are acquitted or there are no charges filed then you should get your paycheck.
