There are specific rules governing how subpoenas can be served. These rules usually require that the person making the service be physically present where the person being subpoenaed is present.
E-mail was not widely used the last time most of these rules were reviewed. You would have to check the specific rule for the court that applies, but, depending on your jurisdiction, very likely not.
