My husband was attacked by an employee of a well-known, national store. He did not retaliate in any way. Should we consider filing suit against the company, and if so, how would we start the process?

Yes you should. Your husband deserves to be compensated for what he went through. You should contact an attorney immediately. You may have only six months to two years, depending on the defendant, to do something.
Most lawyers will take a case like this on a contingency fee basis where you pay nothing unless you collect, then the attorney will take 25% to 40% plus costs. If you have health care bills, at least a portion will get paid as well.
