Recruitment Contract for Physician Recruitment

I submit a contract to clients for the use of physician recruitment. Once we successfully place a candidate with the client, they pay us the fee. In out contract, we state that this contract is governed by the laws of Arizona. At times, clients will ask us to change that form AZ to the state they are in. Is this appropriate? Should the governing state be from who initiated the contract?

You are referring to what is known as a "choice of forum" clause. Under the laws of which state the contract will be interpreted is a matter of negotiation. Whatever state is chosen, that's where the court proceedings will be. If AZ is not the choice of forum, you will have to journey to the state that is if there are legal proceedings involved. You will probably wish to keep the choice of forum clause in AZ rather than to have to go elsewhere.
