Disorderly Conduct
I recently got cited for disorderly Conduct. I had a hotel party and I am assuming it got too loud. I wasn't notified by the hotel staff or neighbors about the noise. The Arizona revised statutes state it had to have been my intent or that I knew I was making unreasonable noise. But It wasn't my intent and I didn't know. Can I really be charged for this?

Yes you could be charged. Your lack of intent could be used in your defense. However, simply by talking very loud may be enough to presume intent to make unreasonable noise.
You may want to see an attorney to ensure that you receive a fair trial.
