My mother died a year ago. My sister gained power of attorney of the estate (my dad is still alive) She is syphoning everythign out of the estate, she has removed my brother and myself from the will, my fathers social security check is now deposited directly into her business account. She pays none of his upkeep or bills, my brother and I do. WHAT CAN I DO TO STOP THIS?

You need to take immediate action by filing the appropriate complaint in the Probate Division of the Superior Court. You may also consider filing a criminal complaint with the police department with jurisdiction where your father lives, however, it is difficult to get the police or the AZ Attorney General to act in these types of cases. You must be prepared to spend some money for attorneys' fees and court costs, however, your father's estate should pay you back for the money you spend to protect him and his estate.
