If you remarry are assets that each party already had before the marriage community property in the state of AZ?

No. Property owned by each prior to the marriage remains the separate property of each unless you change the nature during the marriage.
You may want to consider a premarital or postmarital agreement, which will solidify property/debt/support issues.
