Is there anything I can do to stop my son's father's girlfriend from signing documents that are reserved for a parent signature?

You could start with a demand letter (from us) indicating that such is innappropriate and unnacceptable. If she continued past the demand letter, you could seek an Order from your Judge prohibiting her from doing so.
