As a franchise attorney my advice is to use the name that will be on the contract you sign with them. Don't try to draft an important contact like this on your own. Consult with a good business or franchise attorney in your area for specific advice.

Murphy is right. Have an attorney review the contract. You may also want to consider forming an entity for liability protection, if you haven't done so already.
