I need help regarding how an evidentary hearing works, the proccess itself, as far as What I am suppose to do and not do as a Plaintiff. PLEASE HELP! Thank you, I am in Arizona as well

Because you have asked the question, it is clear that you should not be representing yourself as Plaintiff in this case. Further, it is imperative that you take action immediately to hire a lawyer before you are unable to do so. You, as the plaintiff, have the duty and burden to prove your claims and right to court orders as you have requested.
An "evidentiary hearing" is the trial of the case, and you have the burden, by a preponderance of the evidence (testimony and documentation), to prove the facts that support your claims and the right to relief. If you fail to do that, the defendant can move for a directed verdict in its favor. I cannot give you a tutorial on how to try a case, in this forum.
