should I establish a funeral trust, subsequently enter a nursing home and receive Medicaid benefits, then die....after the trust pays all funeral expenses what happens to the excess funds, if any?

You would want to name a remainder beneficiary; that is, someone who the money would go to if there was any left over after all the funeral expenses are paid. That is usually standard language in most testamentary documents.
