how do you find out who the custodian of a will is in Arizona

There is no "custodian" of a Will. The person making a Will can put it anywhere he/she wants, and is the only one who determines who might hold the original. A person can make a new Will anytime they want, so it is a question which Will is the last will, and whether previous wills have been revoked. Wills are not recorded or registered.
