how do I find out who handled the estate of my recently deceased uncle that lived in the state of Arizona?

You should search the court records of the county where your uncle resided. A probate is not always required, particularly if he put everything in a trust or if he didn't have anything at the date of his death. You might be well advised to talk to his neighbors, they often are aware of who stepped in to take care of the deceased person's property.
