specialist and a primary?
Does the worker's compensation law allow an injured worker with several injured body parts to see both a regular doctor to determine what specialists are needed,and to coordinate care, or can the law require a person to only be treated one body part at a time?

Arizona law does not specifically address the issue you have raised. Instead, the law merely states that you are entitled to coverage for reasonable and necessary medical care that is related to the industrial injury. It sounds to me, however, likes yours is a good argument for having a "quarterback" to lead the team.
I should qualify that, however, in case you work for a self-insured self-provider. A few Arizona employers fall into that category, and those employers get to choose their employees' doctors under workers' comp. All other employees in our state get a choice of doctors, and their physicians can refer them to specialists under the same standard I mentioned above.
Usually, fights about doctors are unnecessary if you have an adjuster with a few vibrating brain cells, because it's a well-known fact that injured workers get better faster if they have confidence in their medical care.
