It depends on the forum in which your case is being heard. If you are litigating the case in a California civil court, there are discovery mechanisms available through which you can obtain the documents by serving the attorney for the company.

If you are in an administrative agency, discovery rules do not apply and subpoenas must be personally served on the employer unless the attorney agrees to accept service on the company's behalf. If not, a California subpoena will not work on an out-of-state company. You will have to plan your case accordingly.
