Usually. Certain documents require greater formality in order to be legally effective and binding, such as deeds and wills, but e-mails, FAXes and other electronic documents can be used as evidence, and under certain statutes can be treated as enforcible contracts. See, for example, the Uniform Electronic Transactions Act, Civil Code sections 1633.1 to 1633.17.
