Legal Question in Banking Law in California

My husband and I were married at a hotel approx one month ago (+a few days). We had requested a final total and paid exactly what they had asked one month prior to our wedding. Now they came back a month after the wedding, two months after we thought we finished paying in full and charged our account with out our consent! We are very mad and upset, has anyone ever encountered this before? Getting ready to go to the BBB and FTC! Their "reason" for waiting this long is that the accounting department was backed up.... I have never hear of any business being two months behind in their accounting and any place that we looked into also required full payment two weeks - one month in advance... help!!!!
