Power of Attorney

If my wife has POA over a bank account with large sums of money. Can I as her husband remove any of that money?

In your dreams. Even if you were named in the POA, and why do I suspect there's a reason why you're not, you'd be legally bound to safeguard the money for the benefit of the owner of the account.
