Legal Question in Bankruptcy in California
What is a better option than a stipulated judgment if I am the debtor in a bankruptcy adversary proceeding before trial? Is it possible to do an alternative dispute resolution (ADR) outside of court instead? Or what other options are there?

You can suggest ADR to the plaintiff. They do not have to accept. If you have not attended the case management conference (CMC) yet, you can tell the Judge that you are willing to go to ADR and the Judge may try to pressure the plaintiff to agree. If not, you will have to through trial.
If you do not have an attorney, I highly recommend you higher an attorney now. Acting as your own attorney in litigation is not wise.
