Is there a consequence to a business such as a bowling alley, if someone is selling pirated dvd's in the bowling alley. Is the risk solely on the seller? What if any risk is the bowling alley in?

If the copyright holder believes that the establishment has benefited from and enabled the infringement they will be sued along with the seller under the theory of secondary liability and contributory infringement.
Keep in mind as well, that this is a crime and although unlikely law enforcement can get involved. If you are contacted by law enforcement or counsel for the copyright holder do not say anything without the advice of your own attorney.
