contract law
A payment was due per contract terms on July 15, 2008.
If I extend the payment due date will this jeopardize the enforcement of the other contract terms.

It depends on the terms of your contract. A late acceptance of the payment(s) may constitute a wavier or may act as an estoppel against other remedies. Best bet is to have an attorney review contract. An amendment or addendum to contract may be a simple solution.
