Can and how does the defendant find our who is funding the plaintiff's suit?

If you're the defendant, just ask. You can ask informally (make a phone call to the plaintiff or his lawyer) or you could submit a discovery request asking the question (assuming it's relevant to the lawsuit).

Chances are it is not relevant to the lawsuit, and therefore you will not have a right to that information in discovery.
