If i did freelance graphic design for a non-profit organization from scratch, who does the digital files legally belong to?

It depends on the agreement. Generally, copyrights can only be transferred in writing. If you are an employee or have a contract that says your work is a "work for hire" then they owns the copyright. If you are not an employee and have not transferred rights to them in writing, then you own the copyright. The copyright owner has the exclusive right to decide how digital files of designs are distributed.
