I am a wedding planner what is the legal amount you can ask for when a client signs a contract?

Generally, you can ask for whatever amount you want. If you think it's important to collect everything upfront (because you worry about payment) then it's probably a good idea. However, the issue will become what your client is comfortable giving you upfront.

This is more of a business decision rather than a legal decision. It will likely become a negotiation between you and your client.
