Signed contracts for car, never took possession or drove off the lot, dealer trying to not let me out of deal

Unfortunately the dealer is legally right. There is no "cooling off" period for automobile sales. If you signed a contract to buy a car, you are legally bound by it, and are liable for breach of contract damages if you don't complete the purchase.
