can a doughnut store post my name @ their register because of a dispute about a credit card transaction?

If it is not visible to the public they clearly can to notify their employees to only accept cash from you. If they are making it public to embarrass you into paying, perhaps not, as that may be defamation of character [that is a tort that is not a civil right].
