My across the street neighbor has passed away and there is/was a man helping her for a few months before her death. Now that she is gone, the helper guy is still living there. Her children had both passed away years ago and she didn't much speak to her grandchildren. How do we get someone to ensure that the property gets sold and the profits go to the grandchildren?

Someone (and probably one or more of the grandchildren) need to review your neighbor's affairs to determine if there is a will or trust. They should also check the county recorder to see how title to the property is held.
They should then take this information and consult with an attorney that handles estate and probate matters. The procedure for the home depends on whether there is a trust, whether the property was held in joint tenancy, whose name is on the deed, and probably lots of other things. There are too many possibilities to outline here. One of the more likely, however, is a petition in probate for the administration of your neighbor's estate and the eventual sale of the home.
