Legal Question in Civil Rights Law in California
I recently graduated from a vocational college, I am currently dealing with a health crisis I would very much like to keep private. Due to my side effects and constant doctor visits - I cannot find it easy to work at this time. My college job placement office has been quite persistent asking for medical documentation stating I have health issues and also what to know what restrictions I may have. I find this to be an invasion of privacy , I would like just to sign the placement waiver and not disclose any of my medical information.

You do not provide enough details, but it sounds as though the school has agreed to help place you in a job and needs to know the information it is asking about to be able to successfully do so. If you sign a waiver that they do not have to provide this service they will not ask for the medical records because there will be no need for them to have the records at that point. They are not violating your rights if they are trying to carry out the terms of the contract you agreed to.
