Refuting a declaration ina small claims appeal

I have found evidence via e-mail that a declkaration used to prove loss of income was written by a friend of the Plantiff and I have also found inconsistant data in the declaration vs. additional e-mails. My question is , How do I and when do I present these facts at the appeal?

You can do it in one or two ways, or both. You can cross-examine the other party about the declaration and the friendship and/or you can subpoena the friend to ask the same kind of questions. Or, you can just present your own evidence showing that the declaration was biased and not based upon fact.
