Is it illegal to read someone's email when they have left their account open on my computer? (Even AFTER I have shown them several times how to log-off)

It may not be illegal to read what is actually on your screen when you get there, but it is a crime to search through someone else's data without their permission. That she carelessly gave you access does not mean you are allowed to use that access, just as carelessly leaving her front door open would not mean you are allowed to enter her house.
