If you make an authorized internet connection to the servers of a company how much information are they allowed to record before it is considered surveillance?

The answer is based in contract. Specifically, the Terms of Service that you agreed to at the time that you made the connection to the server or joined the website and any Privacy Policy will set forth what can be and, if it is written correctly, what actually is collected. As to what is considered "surveillance" you may be asking a "search and seizure" question which relates more to the existence of probable cause. In that case you may wish to direct your question to a criminal lawyer.
