Is there a clause I should put in my contract if I'm coming in to complete a job started by another contractor?

OH yeah. And a number of procedures you need to go through before hammering a single nail. You need complete indemnity and release from all claims for defective work by the prior contractor. Otherwise you are facing ten years (statute of limitations) for a claim that drags you into it.
